Firefly squid, squid, and fresh onion in a soy sauce marinade.
I deep-fried seasonal firefly squid and made it into a nanbanzuke (a kind of pickled greens) with in-season ume seaweed and fresh onions.
There is no twist to the dish, but the flavor is unmistakable and makes the drinks go down a treat.
